Ingredients:
Four cups water for 200gms of pasta (I’ve used tagliatelle, you can use pasta of your choice)
Red and green capsicum - half each - diced
Broccoli-small flower head - diced
For mushroom sauce:
5 medium sized mushrooms - diced
4 cloves of garlic
1 medium sized onion - diced
1-tbsp Olive oil
1 cup whole milk
3-tbsp fresh cream
1-slice of cheese
Preparation:
Bring water to boil and add salt and 1tbsp olive oil, stir it and add pasta - cook till done
*tip-to make pasta yummier you can cook it al-dante and add extra milk to let it cook in the sauce.
Strain pasta under cold water to stop cooking it further.
You can already start making sauce while the pasta cooks.
Take a blender and add garlic, mushroom and onion and a little bit of water to make a coarse chunky purée.
Now take a pan, add some oil olive, add the mushroom purée to it, sauté till it leaves side of the pan, add a bit of water, cook it to a little paste, now add milk and keep stirring, add the cream, let it simmer for a couple of minutes, now add cheese slice and let it melt.
Now add the pasta to it, oregano and salt to taste.
Give it a good mix and toss.
Serve it with a drizzle of extra virgin olive oil on top.
