Cheese Burst Pizza
For the Base
Lukewarm water; 1 1/4 cup
Granulated sugar; 1 tbsp
Active Dry Yeast; 1 packet (2 1/4 tsp.)
All Purpose Flour; 3 cup
Salt; 2 tsp
Extra Virgin Olive Oil; 1/4 cup
Pizza Cheese; 1 cup
Pizza sauce; 1 cup
Cheese Blend made with cream cheese and mozzarella cheese; 1 cup
For the Topping
Sun dried tomatoes;1/2 cup
Onions, diced; 1 cup
Capsicum, diced; ¼ cup
Garlic, roasted; 2 tbsp
Paneer, grilled; 1 cup
Flour Roti; 2-3
Basil; 5 to 6 leaves
For garnish
Arugula leaves; 1 cup
Parmesan cheese; 1 cup
Method:
1. Take ingredients for the dough in a bowl and knead into a smooth, soft dough.
2. Let the dough rest for an hour.
3. Roll out the dough into a 12 inch circle and fold in the edges.
4. Spread the cheese blend like a creamy filling in the center and spread it out evenly.
5. Add the flour roti on top of the cheese filling and spread the pizza sauce, grate cheese
and add the toppings
6. Bake at 180C for 15 minutes.
7. Remove & transfer it to a pizza board, cut into slices & top with arugula leaves & cheese.
8. Drizzle with olive oil & serve.
Mediteranian Vegetable Flatbread
Ingredients
For the base
Whole wheat flour; 2 cups
Refined flour; 1 cup
Sugar;1 tbsp
Yeast;2 tsp
Warm water; 1 ½ cup
For the topping
Cream cheese; ½ cup
Feta cheese; ½ cup
Cheddar cheese; ½ cup
Peppers, roasted; ½ cup
Mushrooms, sauteed; ½ cup
Pumpkin seeds; 2 tsp
Onions, sliced; ½ cup
EV Olive Oil; to drizzle
Method
1. For the dough, take all the ingredients in a bowl and knead to a smooth soft dough, prove the dough for two hours.
2. While the dough proves, start prepping the vegetables, slice onions, slice the roasted peppers.
3. Once the dough has doubled in size, roll it out into a flat sheet, brush it with oil & grill it on a griddle.
4. Remove from heat and spread cream cheese, cheddar cheese, add the peppers & onions & bake until cheese has melted.
5. Once it is out of the oven, add the feta cheese & pumpkin seeds and cut it into pieces.
6. Plate and serve.
Cocktail Recipe
Mosambi and Mango Lassi Highball
Ingredients
Dewars 12 Scotch Whisky; 50ml
Mango Lassi; 50ml
Mosambi Juice, fresh; 50ml
Lime leaf, Pistachio & Saffron strands; for garnish
Method
Throw in all the ingredients with ice, shake well and double strain into a clay lassi mug with ice. Garnish with a lime leaf and ground pistachio.
